Vanilla Ice Cream (Keto and Dairy Free)

Dang it’s hot out, with all this heat all I want to do is eat ice cream! So, during COVID I have been working on my ice cream skills. The first 2 rounds I made ice cream scrambled eggs and I still ate it because I spent a ton of time prepping the fresh passionfruit in it. The good news is I recently nailed it with a little help from my favorite alternative bakers over at Sweet Laurel, if you love baking gluten and grain-free they are your girls. Their stuff is amazing and since I am far from a great baker, they help inspire me. This ice cream recipe is simple once you get down the basics. Compared to store-bought ice cream this is so much healthier for you, no fillers, additives, high sugar, artificial flavors etc. I use this ice cream maker and always just keep the insert in the freezer.

Strawberry Moringa Mint Smoothie

Prep Time: 10 minutes

This low sugar, keto (high-fat) smoothie is my go to in summer. When I see strawberries at the market I will freeze half for my on the go lunch or snack (depending on my workout). Because of the healthy fats from the coconut, MCT oil and chia seeds, this smoothie keeps you full and satisfied. Cauliflower is my secret to a creamy consistency without the high sugar and carb from the traditional banana used in most smoothie recipes. Try adding a scoop of collagen or protein to up the protein as well.

Coconut "Low Carb" Rice

Rice is something I think people tend to stay away from on a strict keto diet. I have found personally and with a lot of my clients (and Dave Asprey from Bulletproof also confirms) if you cook and then cool rice before consuming and also add coconut oil to the cooking process, you are changing how your body absorbs the carbohydrate, lowering the glycemic response in the body therefore not causing your glucose (blood sugar level) to spike as high which also is a reason people gain weight.

I decided to use strawberries as the base since they came in my CSA box, but feel free to sub in your favorite fruit or keep it plain with just vanilla. Summer Rhubarb Berry Galette (gluten free)

As most of you know I would not call myself a"baker" by any means. I always try to make something healthier or add some crazy ingredient like an adaptogen reishi powder and end up ruining it. This summer galette was inspired from some seasonal rhubarb I received from a local farm and I thought it would be super fun to try out it out! I adapted this from Cannelle Vanille who has amazing recipes, basically so I would have less of a chance of screwing up. It actually turned out really good, tart but good. I am afraid of sugar since it leads to disease and inflammation, so I did my best to keep it low sugar, that where a scoop of ice cream helps.
